Your Vegetarian Passover Menu
Garlicky matzo is a must
Passover is in a little over a week and I still don’t know what we’re doing. My kids have a dance competition and we won’t find out their schedule until a few days before. And that’s my life as a dance mom. 😅
Here’s what I do know: we’ll be with my parents, we’ll eat matzo ball soup, we’ll have a Seder, and there will be a lot of veggies.
Because you always ask for more vegetarian/veggie-packed recipes, today I’ve put together a Passover menu filled with delicious vegetables. These are great on their own if you’re hosting vegetarian friends or will complement your brisket perfectly.
Now let’s manifest the first Ben-Ishay Seder where everyone eats the matzo ball soup. Here’s what’s on the menu this week:

These recipes are designed to keep everyone fed while you finish cooking dinner. Prep them a day or two before to make your life easier, then set everything out as people arrive. Serve with veggies, tortilla chips, or matzo. This one is also a crowd-pleaser.
Mains & Sides





Filling the table with a variety of veggies is the perfect way to keep everyone happy. (If you’re making traditional dishes like brisket or stuffed cabbage, all of these would be great as sides.) I love including sautéed cabbage in this menu to mimic the warmth and coziness of stuffed cabbage, and cooking the matzo with garlic and herbs will absolutely be your new favorite way to eat it. Serve the salad with gluten-free crispy tofu for added protein.
