One of the first recipes I shared here was a Rainbow Grazing Board with Green Goddess. This dip is thicker than the original dressing and the rainbow of raw veggies adds to the vibe. It’s the ultimate girl dinner, snacking board, or party centerpiece year-round, but feels especially festive for St. Patrick’s Day. I would gladly eat this for lunch any day of the week (and have).

Rainbow Green Goddess Grazing Board
Ingredients
¼ cup extra virgin olive oil
Juice of 2 lemons
2 garlic cloves
1 bunch parsley
1 bunch dill
2 scallions, trimmed
2 tablespoons white vinegar
1 teaspoon salt
1 tablespoon nutritional yeast
¼ cup raw, unsalted cashews
Black pepper
To serve
2 medium carrots
2 red bell peppers or 3-4 sweet peppers, in a variety of colors
2-3 mini cucumbers
1 cup sugar snap peas
Fresh pita
Directions
Add the ingredients in the order listed to a high-powered blender. Pulse until smooth and no green flecks remain.
Cut the carrots and peppers into sticks and the cucumbers into slices on a bias.
Trim the sugar snap peas if needed. Cut the pita into triangles.
Pour the dip into a bowl and surround with crudité. Serve immediately. Store any leftovers in an airtight container in the fridge.
