Your 4th of July Menu
on the menu (vol. 10)
How did I miss the memo on how easy of a meal hot dogs are?! The other night, I threw six on a grill pan, sliced a sourdough loaf, and set out sugar snap peas. In less than 10 minutes, I had dinner for three kids ready! Is this our go-to kid meal of summer?
If you’re grilling hot dogs or burgers this week, this menu is filled with recipes to pair with them, including great salads for a crowd and filling grains. And if you aren’t grilling, you can enjoy these meals any day or time of year.
I recommend making a big batch of Green Goddess to serve as a grazing board and returning to my tie-dye ice cream for a festive summer dessert! My go-to burger recipe is always a crowd pleaser, too.
Here’s what’s on the menu for your July 4th BBQ:
Broccoli Burgers with Green Goddess
Golden Girl Salad with Marinated Ribs
Farro Salad with Grilled Salmon

the perfect party meals do exist
Broccoli Burgers with Green Goddess
Part veggie burger, part fritter, these burgers use a whole head of broccoli (stem included!) and pair so well with creamy Green Goddess. So well that maybe it’s part salad, too? No matter how you classify it, the vegans and vegetarians at your barbecue will be thrilled. You will be too, when it’s time to eat the leftovers.
Pro-tip: Make Green Goddess for a grazing board and keep some on the side for the broccoli burgers. Two dishes in one!
Golden Girl Salad with Marinated Ribs

When I made this salad last year, I knew it had earned a permanent spot in my summer meal rotation. If you haven’t met the Golden Girl Salad yet, you’re in for a treat! With sweet, creamy dressing—thanks to a secret ingredient!—and lots of summer produce, this is the salad you’ll crave all summer long. It’s also great as a dip! The sweet acidity of the salad pairs really well with juicy, marinated ribs for a filling meal that makes everyone happy.
Farro Salad with Salmon
Make this for the barbecue, then make it again on Sunday to cover lunches all week long. This grain salad is one of my favorites—it’s covered in miso vinaigrette (IYKYK) and packed with lots of veggies. The salmon rounds it out and adds a nice lean protein (which can so often be missing from barbecues) that you can make in the oven or on the grill.
And I have a quick question before you go!
Hope you have a great week, whether you’re celebrating July 4th or not!
