THREE INGREDIENT DINNERS. These are meals for when you’re in survival mode. If you’re tired, these are for you. Save these, send them to a friend, make one tonight. Write them down and stick it on your fridge so you remember!!
They’re all three ingredients (condiments don’t count, sometimes cheese doesn’t either) and you can adapt them based on what you have and love. Unlike the usual meals I share, these are more to give you ideas and inspiration than they are complete recipes. Dinner doesn’t have to make you crazy. Sometimes a jar of sauce and pasta hits every note.

Adi went to a conference this week for work and brought me vanilla paste. This one is my go-to (get the smaller version, unless you bake every day).

Bacon, Egg, & Cheese
With KSP (if you know you know). We use turkey bacon; cook it with a little oil then crack an egg in. Break the yolk slightly with a fork and cook for about a minute, then flip and cook for another minute. While the egg cooks, broil or toast a piece of bread (or bagel or pita) with shredded cheese on top until the cheese is melted. Transfer the egg over the bread, then add salt, pepper, and ketchup. Cut in half to make a sandwich.
This is constantly in our dinner rotation (so you’ve likely seen it before!). We like to eat it with nori.
Taco Night
We have taco night all the time. The easiest execution: Brown ground beef (or chicken/turkey) in a pan, then stir in a packet of taco seasoning (I like mild). Serve on tortillas with leftover slaw from the night before.
Dino Parmesan
Put the nuggets on a baking sheet so the side with the well is up (unless your nuggets are perfectly flat on both sides, then it doesn’t matter). Spoon 2 teaspoons of marinara into the well and top with shredded mozzarella. Bake the nuggets according to package instructions and you’ve just made the easiest (and cutest) chicken parm ever.
One-Pot Meatballs & Pasta
Frozen foods are essential for weeknight meals. We always have meatballs stashed away. Make it an easy one-pot meal by tossing a 12 oz. bag of frozen meatballs in a pot with 2 cups of dried pasta, a 28 oz. jar of Rao’s marinara, and 2 cups of bone broth (add more broth or water as needed to fully cover the pasta). Bake covered at 300°F for about an hour, until the noodles are tender.
