The best thing about freezing cold days is that they're the perfect excuse to make the ultimate comfort food—soup!
Here are some of my latest and greatest recipes from the past few weeks—one of which has divided the internet on whether it’s a chili or a soup. It’s definitely brothy, but has all of the ingredients that technically make a chili, so you be the judge. Whatever you call it, it’s delicious. The shakshuka (while not technically a soup) is a staple in our house, and the green soup is a cozy (vegan!) way to eat your greens all winter long.

Taco Chili (Soup?)
Whatever you call this, it’s delicious and so easy. I used a food processor to chop the mirepoix, threw everything in a pot, and let it simmer. Top with cheese, sour cream, cilantro, scallions…whatever makes you happy. It’s a cozy meal that will make your kitchen smell amazing. This is the grater I used for those beautiful shreds of cheese.
Green Shakshuka
We make shakshuka all the time (this red version is great for hosting), but a few weeks ago I wanted to use up a bunch of greens we had in the fridge and made this for a quick lunch. Serve with toast rubbed with a garlic clove.
Green Soup
I love versatile recipes, and this one is it. It’s packed with greens (I used parsley, you can use cilantro), beans (any white variety works), and I had leftover rice to make it more filling. The spoonful of za’atar at the end added so much flavor, and the massive container of spinach basically means it’s a salad, right?
Soup is the only reason I am motivated enough to live through winter😂🫠

I think you should cook with a “normal”person which would be me. I would love to make soup with you or anything for that matter. Sent you an email hopefully they forwarded it to you anyway the green soup is delicious. I actually added pecorino Romano cheese instead of the zaatar this time and it was really good.
