I’ve been scoping out nearby markets for weeks waiting to see pops of bright red. And they’re finally here! The best of the crop will be along later in the season for me, but maybe they’re already peaking where you are. And for all of you in other parts of the world (hello, New Zealand!), I’ve also included a recipe that can be made easily with canned tomatoes in its place.

Tomato Shakshuka with Eggplant and a Green Salad
This is one of our go-to hosting recipes—it’s easy to make and doesn’t take a ton of time. Serve with grilled or fried eggplant, a big green salad, and crusty bread or fried potatoes. I made matzo brei for the kids, too!
Cauliflower & Cannellini Curry with Rice
When I started making this, I thought it was going to be something else entirely. It’s truly a lesson in trusting the process! The result had all the delicious flavors of curry that I love, and the cauliflower helped thicken the sauce. (Yes, it’s vegan and gluten-free!) Admittedly, it looks a little like baby food (especially since I didn’t get a pic of it on rice), but I beg you not to judge a book by its cover and taste for yourself. It’s a great weeknight meal that would save easily in the freezer!
The Sandwich of the Summer
Once you find really good, juicy tomatoes, it’s hard to go wrong—a simple sandwich with a few slices, salt, and pepper is really all you need. But this one takes it to the next level. I toasted fresh challah (made by Adi, but you can use some from a bakery) on a pan after brushing it with garlic and herbs, then layered extra thin slices of just about everything in reach. Make it, then make it again. Anyone who sees you with it will ask where it’s from.
