On Monday night, I interviewed Giada DeLaurentiis at 92NY. I grew up watching her (ok, I was in my teens/20s. Formative years!) and didn’t realize how nervous I was until after it was over. When I asked if you were looking for cooking inspo last week, I got a lot of requests for quick lunches, healing soups, and meals that are easy to prep in advance. I linked a bunch of recipes in the chat, but here are a few new ones to add to your rotation—including the most delicious beef soup, made with caramelized leeks and boneless short rib. Yum. Beef Stew Soup
This is not a stew. It’s a soup—brothy with lots of comforting ingredients. The beef is slow-cooked so it falls apart easily with your spoon. I chopped some of the leeks for the mirepoix and caramelized leek halves in the beef fat before bringing everything together for a little extra flavor. Prep it during your lunch break, pop it in the oven, and think about it until dinner. You’ll love it.
The Easiest Lunch Bowl
I made this while I was on a call the other day. That’s how easy it is. I already had the rice, beets, and cucumber in the fridge, so I threw it all in a bowl and fried eggs to go on top. Eggs are expensive, so swap the rice for sourdough and egg for cottage cheese for an equally satisfying, delicious meal. If you love bowls as much as I do, here’s more inspo.
