How to Pack the Best Bowls
ft. five new recipes I’m loving
The number one rule of bowls is easy: Use what you have!
Bowls are the delicious meal prep you need if you have no time to cook during the week and/or hate eating the same thing twice. We aren’t talking about leftover chicken and rice here—we’re serving nourishing, flavorful bowls packed with a variety of textures and ingredients so every meal feels like a treat. And the best part is, it can be ready in less than 10 minutes if you prep ahead of time.
Today’s menu features three delicious bowls, including 5 new recipes I’m loving right now. Add a piece of garlicky toasted sourdough or a fresh pita and you have a droolworthy lunch you’ll have to hide from those around you. (Or just send them this email so they can benefit, too.)
Here’s what’s on the menu this week:

How to Pack Your Bowls
First, a bowl primer. Here are the basics you need to pack a delicious bowl:
Protein: I use tofu, cottage cheese, eggs, or leftovers.
Greens: I love to add microgreens, arugula, and fresh herbs for a pop of flavor.
Veggies: For color, flavor, and texture! It’s great to have a variety of veggies to choose from, like raw, braised, and/or dressed (to name a few).
Variety of Textures: For creaminess, add sliced avocado, an egg, or cheese. For crunch, toasted pumpkin seeds and almonds. And for a salty bite, add chopped olives, capers, or feta.
Crispy Marinated Tofu with Za’atar Carrot Salad and Confetti Greens
I keep seeing shredded carrot salads all over my FYP, so I decided to make one my way. I added lots of za’atar and sesame seeds, and if you’re anything like me, you’ll eat it straight out of the mixing bowl. I spread a delicious garlicky yogurt sauce on the sides of my pita, but drizzling it over the bowl is the perfect finishing touch.
Halloumi Grain Salad with Sautéed Zucchini, Tzatziki, & Mediterranean Lamb Meatballs
With grilled halloumi (salty bite), sautéed zucchini (tender veg), and fresh tzatziki (extra flavor and veg), this bowl is what dreams are made of. It would pair perfectly with salmon or Mediterranean Lamb Meatballs for extra protein, and don’t forget fresh pita.

Mediterranean Bowl with Israeli Salad, Braised Beets, and Cottage Cheese
I could eat this meal over and over again. But the best part is that you can make the salads and mix and match them with the others in this post. Add a scoop of carrot salad, a spoonful of hummus and you have my dream meal. Time to start chopping.
