When I asked if you were looking for cooking inspo last week, I got a lot of requests for quick lunches, healing soups, and meals that are easy to prep in advance. Beef Stew Soup
This is not a stew. It’s a soup—brothy with lots of comforting ingredients. The beef is slow-cooked so it falls apart easily with your spoon. I chopped some of the leeks for the mirepoix and caramelized leek halves in the beef fat before bringing everything together for a little extra flavor. Prep it during your lunch break, pop it in the oven, and think about it until dinner. You’ll love it.
