Here's what to make
We’ve reached the sticky days of summer, meaning more tomatoes and more sweaty rides on the PATH (especially when your train car doesn’t have working AC 🥵). And that means more no-cook recipes to nourish you without standing over a hot stove. These are the perfect summer meals for easy nights at home when you don’t want to make a fuss over what to eat—and best of all, they save well for lunch the next day.

While my daughter has been at camp this summer, I’ve been reorganizing our apartment. Tofu Slaw Wrap with Miso Vinaigrette
This is the perfect lunch. It’s light-yet-filling, and the slaw gets better after a day or two, once the tofu soaks up the vinaigrette. To change things up, make a wrap one day and add the slaw to a bowl with sliced cukes and hard-boiled eggs the next. Mixing and matching this week is highly encouraged.
Green Goddess Chickpeas in a Pita
Incredible to serve as a side, as a full meal, or to pack for a picnic. The goddess gives you the ability to stock up on fresh summer basil, while the cucumber gives a refreshing crunch we all crave right now. Mash it slightly to stick on toast, add sugar snap peas for more greens, and, of course, add them to a bowl later in the week.
Perfect Chicken Salad
We’re making this with rotisserie chicken this week. Normally, I use chicken soup chicken (aka chicken slow-cooked in broth) or leftover spatchcock chicken to make chicken salad, but we aren’t heating our houses more than necessary today. Use whatever you have to dive in, even if it’s a sliced cucumber or potato chip. Yum.
