We're eating well this year
“New year, new you” is bullshit. You have to do what works for you! I like to make resolutions because I love goals and holding myself accountable (sometimes too much).
This year, I’m going to be better at meal planning dinners for my family before the week starts. It’s so much easier to eat well when you plan your meals or make a big batch of something delicious to eat throughout the week. It saves you money and it makes you feel better. I need to be better at it too, so you’re not alone!
To start 2025 strong together, today’s meals are easy to make in advance so you don’t have to spend hours in the kitchen. And there’s a ton of variety, too, so you’re not stuck eating the same food day after day. It’s all delicious and will make you feel incredible—the best way to start the year.

Easy Shredded Salad in a Wrap
My number one hack for eating well is to always have a jar of your favorite dressing in the fridge. If you know there’s miso vinaigrette to be had, you’re much more likely to make a salad to go with it! This salad is so easy I made it while I was on a call (this helps), and it has everything you need—refreshing veggies and protein to keep you full. Add it to a wrap or a pita for a delicious lunch or snack, and keep leftovers to add to a bowl.
Chopped Salad with Crunchy Tofu
Another salad with miso vin, this one inspired by my favorite Italian sandwich, with mozzarella and salami. To make it vegan, swap the mozz and salami for this crunchy, flavor-packed tofu. If you don’t eat all of it right away, dress only what you plan to eat and save the rest in the fridge to serve on toast or (yep, you guessed it) in a fresh pita.
Greek Goddess Salad with Mediterranean Lamb Meatballs


One more miso vin salad for your week—this time sprinkled with za’atar and feta. When I started working out every morning a few years ago, I was suddenly hungry all the time and realized I needed more protein. If your resolutions involve moving your body more, remember that! I added the meatballs on top just for you, or make delicious crunchy tofu. And do I even have to say this would be perfect in a pita?
