Passover is in a little over a week and I still don’t know what we’re doing. My kids have a dance competition and we won’t find out their schedule until a few days before. And that’s my life as a dance mom. 😅
Here’s what I do know: we’ll be with my parents, we’ll eat matzo ball soup, we’ll have a Seder, and there will be a lot of veggies.
Because you always ask for more vegetarian/veggie-packed recipes, today I’ve put together a Passover menu filled with delicious vegetables. These are great on their own if you’re hosting vegetarian friends or will complement your brisket perfectly.
