The Salad(s) of the Summer

It’s the most wonderful time of the year.
Spring and summer produce has finally hit the farmer’s markets near me, inspiring lots of delicious salads. These salads are filled with greens—fava beans, snap peas, and asparagus, to name a few. I’m already anticipating the best summer tomatoes (look out for some of those recipes next Wednesday).
But that’s not all I’ve been making—now’s the perfect time to make light, springy strawberry sponge cake, perfect for an after-school snack.

If you’re in the northeast, now’s the time to find fava beans. This is our favorite way to make them, inspired by my mother-in-law.
I love that this is served over a swirl of smooth, blended cottage cheese. It makes it extra filling. (Use labneh if you aren’t a fan!)
