How’s everybody doing? My whole family is sick, so we’re living on the juice I shared in September, waiting for the nutrients to fight off this bug. (I unlocked this post so everyone can benefit from these healing recipes as we enter flu season.)
This has already been a long week and it’s only Wednesday. For all my fellow stress bakers, yesterday I pulled together 19 recipes to bake when you need a cozy distraction from the world. And for everyone else, today I’m sharing my go-to comfort weeknight dinner: pasta.
When in doubt, make pasta. That’s a rule I live by. If you’re a caregiver or parent, you know the weight of having to feed every single meal to your spouse or loved ones. It’s a wonderful responsibility, but some nights I don’t know what to make. And that’s where pasta comes in. I look in my fridge and pantry to see what I have on hand to make it a balanced meal—like olives, broccoli, mushrooms, and tomatoes.
Here are my favorites:
Garlicky Broccoli Pasta
Vegan Bolognese
Pasta Puttanesca

I’m thrilled to partner with Earlywood for a giveaway just in time for your Thanksgiving feasts. Two winners will be chosen—one will receive an Essentials Set and the other will get a Cooking Spoon Set. To enter, comment below with your family’s go-to weeknight dinner. I’ll randomly select winners next week. *Must be in the US and a paid subscriber to enter.
Garlicky Broccoli Pasta
This is the perfect weeknight pasta for anyone who’s seconds away from ordering pizza. It comes together in one pot, you can use frozen broccoli if you don’t have fresh, and it’s bursting with as much garlic as you can handle. 1000/10.
Vegan Bolognese
Traditional bolognese is hearty and filling, the perfect meal for cold weather. This version swaps ground meat for a variety of mushrooms and jarred artichokes to mirror the texture and the umami flavor. I used long coiled noodles for this, but it would be equally delicious with orecchiette or shells to scoop up the sauce or cavatappi for the fun swirls.
Pasta Puttanesca
This umami-packed pasta is made with entirely pantry ingredients. Buy them now and keep this recipe in your back pocket for the next time you have no idea what to cook.

Any suggestions for anchovy sub for the puttanesca for a fish averse husband (eye roll eye roll)?
Yum! So helpful to have these on hand!
