Simple, Packable Picnic Salads
Take it from deli to delicious
I’m always looking for two things: 1) simple, delicious meals that are quick to make, and 2) new salads to eat on toast (or in a pita). Somedays, that’s a simple, chopped salad, but I love riffing on classic deli salads too.
I’ve had a lot of inspiration for this—my mom makes the best tuna salad, and Adi’s mom makes great egg salad with potatoes. In the world of deli salads—that is, salads often made with a heavy hand of mayonnaise—I’m always looking for ways to add more of a refreshing crunch or lightened dressing. Simple swaps (like trading mayo for tahini or adding a squeeze of lemon) make this easy and add extra flavor! Whether you go with a traditional tuna or chickpeas, all these salads are super packable and great for picnicking or office lunch. Level up with a bed of crunchy greens or a side of toast for a satisfying meal.
