And now for a recipe to save for your Thanksgiving feast. (It’s vegan AND gluten-free, to make everyone around the table happy.)
Maple Roasted Butternut Squash
4-5 butternut or honey nut squash
¼ cup olive oil, divided
¼ cup tahini
¼ cup maple syrup
½ teaspoon salt, plus more to taste
¼ teaspoon ground sage
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
Black pepper
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Trim the ends off the squash and slice in half lengthwise. Scoop the seeds and stringy parts out with a spoon.
Place the squash on a baking sheet lined with parchment paper and drizzle with 2 tablespoons olive oil. Season with salt and pepper. Bake for 20-25 minutes, until tender and lightly golden on top.
In a small bowl, whisk together the remaining 2 tablespoons olive oil, tahini, maple syrup, salt, sage, cinnamon, nutmeg, and cloves until smooth. Taste and adjust seasonings as needed.
Remove the squash from the oven. While still warm, use a pastry brush to cover the squash with the tahini mixture.
Return to the oven and bake for 20 more minutes, until the top is golden and caramelized. Serve immediately.
