I’ve had a watermelon sitting on my counter all week, which my neighbor begged me to use to make Watermelon & Corn Salad. If you’re hosting outdoors this summer, add this to your list—it’s light, refreshing, and the perfect combo of sweet and salty. There are so many ways you could get creative with it, too—grill the corn and watermelon before you cut them, add fresh herbs, or chop it extra fine and serve as a dip.
