One person’s leftover mashed potatoes is another person’s gnocchi. Like meatballs, gnocchi is a great vessel for flavor. It’s fun, delicious, and so flexible—you can use your favorite sauce, whatever potatoes you have on hand, and even crisp them up to top a salad. I love getting purple and sweet potatoes, because they’re richer in nutrients and antioxidants than typical Russets.



As we head into colder months, keep these recipes in mind when you have leftover mashed potatoes in your fridge! I also added a variation made with cottage cheese for a protein-rich meal that comes together in a food processor.
