Easy, cozy recipes for the week in-between
I love this community so much. And I know that you’re probably all busy getting ready for celebrations happening tonight and tomorrow, so I wanted to take a moment to wish you all a happy, healthy holiday. You guys are my present!
Here are a few recipes to keep you nourished, body and soul, during this wild holiday week. Who cares what day it is when you’re eating well?
Whether you make latkes on one night or eight, here are my tips for making them as delicious as possible.
Create holiday memories with a cute gingerbread house or bake a batch of your favorite cookies.
Take it easy! Today’s recipes are easy to make but don’t taste easy—the best kind of meal. Here’s what’s on the menu this week for your post-holiday ease:

Short Rib Stew
If you’ve already cooked a huge feast this week, here’s a hearty option that’s equal parts cozy and easy. It takes about 30 minutes to prep, then you just have to pop it in the oven to finish. This makes just enough for 2-3 people as a meal, so you don’t have to worry about packing your fridge with more leftovers.
Leftover Chicken Soup
You can use whatever leftovers you have for this soup—dark meat or white meat, turkey or chicken. It’s a great way to clean out your fridge and start fresh in the new year! If you have potatoes, add those; if you have leftover rice, add that. You can use any onion or shallot you have. Add extra garlic or ginger to change the flavor profile to be something you love, then cozy up and enjoy. Here are a few of my favorite soups if you’re craving more.
Steak & Slaw
We make steak for dinner at least once a week, usually paired with a salad. When the farmer’s market is open, we love stocking up on ribeyes from Cotton Cattle and freezing them for later. Steak may sound daunting, but it doesn’t take a lot of effort to make a perfectly cooked, flavorful steak. While it cooks, mix up the salad and you’re ready to eat. (You can also wrap it up in a tortilla if you feel like it.)

Crispy Tofu & Slaw
If you’re more into tofu than steak and you haven’t made this recipe yet, stop what you’re doing right now and make it. It’s perfect for salads, wraps, or even just snacking on (and pairs so well with this goddess-inspired slaw). It’s gluten-free, but still has a delicious crunch thanks to the nutritional yeast in the batter. Make it now, make it all of 2025.
