Five Last-Minute Thanksgiving Salads

This is it. It’s crunch time.
Here’s my annual reminder not to panic. Write out your list of what you’re serving if you haven’t already and work backwards. If, once you write the list, you realize there’s not a veggie in sight, come here and take your pick. You don’t have to chop all day to make an incredible salad that everyone will love. And if you’re really in a pinch, Supermarket Slaw is always there for you.

Level 1
These are the perfect easy salads when the rest of dinner is ready and you realize there’s no green on the table. These are two of my favorite salads of all time, and they come together in minutes. You don’t need any fancy ingredients to make them—no one will know it wasn’t planned.
Life-Changing Lettuce
All you need is iceberg and a few pantry ingredients to make an incredible salad that everyone will love.
Cukes & Beans
I love this so much as a refreshing twist on green bean casserole. It’s served cold and is super easy to make.
Level 2
If you have time for a quick grocery run, these simple salads will make everyone at the table happy and require just a few more ingredients than the two above.
Big Herby Salad
This is the perfect balance to all the rich, filling foods on the table. I love how versatile this salad is. If you don’t have fennel, use celery. If you don’t have bok choy, use cabbage. If you don’t have cabbage, use a bag of cole slaw mix. Now’s not the time to get fussy! The dressing and herbs are what really make this salad shine.
Another Slaw
Another slaw option!! I love crunchy slaws and this one is a great option if you have a little time to mandoline. USE THE GUARD. You have time to squeeze a salad in, not make a surprise trip to urgent care.

Crunchy Maple Slaw
If you have a liiiittle time to kill while everything cooks (or if you’re a guest), make this one. If you don’t, scroll back up!! The maple mustard vinaigrette gives the perfect fall touch to the meal, no decorations needed.
