Even though September’s right around the corner, I’m still clinging to summer.
This time of year, all I want to do is fill my biggest tote with as many tomatoes, eggplants, ears of corn, and zucchini as I can. This week’s meals are inspired by those flavor-packed end-of-summer ingredients, plus a riff on the lunch I threw together the other day for me and Adi.
On top of enjoying summer produce, I’ve been trying to eat more protein lately. A bunch of my friends asked our trainer to create meal plans with goal macros for them, so I joined in (didn’t want to feel left out!) and it has been eye-opening. I normally don’t track anything, but it’s interesting to see the data behind what I eat—I eat way more fat than I realized! It has inspired me to learn more about the ingredients I use, plus get an in-depth understanding of nutrients. I’d love to chat about it if you do this, too.
