Eggplant season—like market season—is in full force right now, and we’re going back to basics. A lot of the time when people say they don’t like eggplant, it’s because it’s rubbery or soggy! Today, I’m sharing a few of my tips for getting delicious eggplant every time, along with my favorite eggplant recipes.
How to get Crispy, Delicious Eggplant
If you want to grill or fry an eggplant, slice it into ¼” pieces, then salt both sides and rest on tea towels to get the excess liquid out. After a few minutes, pat them dry and brush both sides with oil. Cook on high heat until they’re slightly darker than you think they should be.
How to Pick an Eggplant
Adi taught me this! When you’re buying an eggplant, you want the lightest one you can find—it means there are fewer seeds. Pick up two similar-sized eggplants and weigh with your hands, then choose the lighter option.
