Green is my favorite color partly because I love all green vegetables. Lucky for me, they’re equally nutritious and delicious, especially when you add crunchy toppings and bright flavors. So many salads are summer favorites since they’re light and cool, but I’m here to keep green on your plates year-round. These recipes are hearty (sometimes warm!), perfect for serving as a side or adding a pop of color to your table.
