I’ve never ordered a pumpkin spice latte in my entire life. (Should I?!) I’m not one to hop on a trend, so I never really appreciated pumpkin (or pumpkin spice) until recently. I love the blend of spices that make up pumpkin spice—cinnamon, nutmeg, cloves, ginger. It makes your whole kitchen smell like fall.Â
Over the past few years, I’ve started incorporating vegetables and squash into baked goods to get my kids to try new foods that they otherwise wouldn’t touch with a 10-foot pole. Pumpkin makes a moist, delicious cake that we all love, filled with nutrients. I like to buy a whole sugar pumpkin and use it to make homemade pumpkin purée then toast the seeds for snacking.
