6 Favorite Zucchini Recipes
for all your zucchini bounty
Peak zucchini season is almost here! For those lucky enough to have gardens, it’s the time of year when you start begging neighbors to take some of your crop. For others, it’s when you go to the market to seek out piles and piles of gorgeous summer gourds to take home. However you end up with your summer bounty, here are 6 of my favorite ways to cook with zucchini during hot summer months.
If you’ve ever made anything with grated zucchini, you know that a good box grater and cheesecloth are necessary. These are my faves.
My brow powder and brush were on sale during Prime Day so I stocked up!
You all know I have a counter-sized cutting board (it’s a Boos). But if I’m ever preparing meat or anything messy, I use this one—it doesn’t absorb the bacteria or add plastics to our food.
My citrus juicer was the most popular item in my Amazon shop this week. Even if you missed the sale, it’s well worth it! (I’ve bought it twice.) It’s great because it stores the lemon juice in the juicer until you’re ready to pour.
This is such a great recipe for summer BBQs! Save the pesto to spread on toast the next day (paid subscribers got all my toast pointers on Wednesday!).
Made with yellow squash and zucchini! They’re super pliable so you can fill with your favorite toppings.
A great dinner party side, or top with an egg (or any protein you love!) to make it more filling.
Part frittata, part soufflé, this fluffy casserole is packed with zucchini, Parmesan, and eggs for a savory breakfast to impress.
Perfectly crispy, flavor-packed fritters filled with veggies.
This is one of our go-to meals in early fall—but with sweet, flavorful zucchini, it’d make a comforting summer meal, too.
