With frigid temperatures this week, I’ve focused on hearty, cozy meals that nourish. These three hit all the notes and can be used in so many different ways. For the tacos, make crispy tofu instead of fish, or fill them with leftover melted beef. There are so many ways to get creative and stretch these meals well beyond one night.

Air Fryer Fish Tacos with Miso Sesame Slaw
Tacos make regular appearances at our dinner table. It’s easy to give everyone a meal they’ll love, even the pickiest eaters. I shared this slaw on Saturday and it’s quickly become my new favorite—perfect in tacos, pitas, or wraps. The fish sticks take a little bit of extra time; if that’s not your thing you can use a simple air-fried fish or even frozen fish sticks. But they are worth it.
Make it vegan: Serve slaw in tortillas with crispy tofu instead.
Melted Beef


I’ve been testing variations of this for a while (like this one) and this is it. The beef shreds perfectly. It’s more about the beef and less about the stew. Adi stuffed some in a pita with slaw and I served the rest with angel hair cooked directly in the sauce. It’ll be on repeat in our house all winter.

Spatchcock chicken has quickly become my go-to winter meal. It’s easy for me to throw in the oven after work but tastes like you cooked it for hours. Here are my three favorite ways to enjoy it, I hope you love them, too.
