End-of-Summer Meals, On Repeat
What I’d eat all month long
Even though September’s right around the corner, I’m still clinging to summer.
This time of year, all I want to do is fill my biggest tote with as many tomatoes, eggplants, ears of corn, and zucchini as I can. This week’s meals are inspired by those flavor-packed end-of-summer ingredients, plus a riff on the lunch I threw together the other day for me and Adi.
On top of enjoying summer produce, I’ve been trying to eat more protein lately. A bunch of my friends asked our trainer to create meal plans with goal macros for them, so I joined in (didn’t want to feel left out!) and it has been eye-opening. I normally don’t track anything, but it’s interesting to see the data behind what I eat—I eat way more fat than I realized! It has inspired me to learn more about the ingredients I use, plus get an in-depth understanding of nutrients. I’d love to chat about it if you do this, too.

One-Pot Chicken Lettuce Wraps
Similar to the very popular One-Pan Chicken Fajita Wraps from my newsletter’s early days, but inspired by takeout moo shu. I made another version this week on a whim, which Adi—who claims not to like chicken—finished off the next day. It’s a great one-pot meal with lettuce wraps, or serve over rice to make it more filling.
End-of-Summer Salad
I would eat this every day of August if I could. The dressing is simple and herby (you can use any herbs you have) and it’s even better eaten on a chip, meaning it could double as a dip at your next backyard party.
Eggplant & Tomatoes with Rice
It’s weirdly cool in New York this week, which has me dreaming of fall soups already. But don’t worry, I’m not going there yet! Instead, I’m whipping up this comforting meal that makes summer produce pop. If a sauce and a stew had a baby, it would be this, the perfect end-of-summer meal for crisp nights when you want to cozy up with your tomato harvest.
